I’m Michael White, Australian born and with 26 years experience in both corporate 5 star, resort and private dining on both large and small scale. Together with my partner Sian who has over ten years business acumen behind her, my passion for food has taken me around the world, from Australia to Asia, North America and Canada, The Mediterranean and now Wales, solely to increase my awareness but also to open my mind to new techniques as well as new products.

My influence is definitely Asian, based on the simplicity and cleanliness of the presentation and the unfussiness of the dishes, allowing the true texture and flavour to speak for themselves through gentle seasoning on the most delicate of flavours to enhance the taste but not to control it.

I believe my true desire is to pass this knowledge on and let others experience these tastes, and I feel there is no better destination than The Ruperra to allow this to flourish!
